I just love the flavor of peppermint mocha, but hate to buy the creamers because they are non-dairy and have way too much sugar in them, so yesterday I made an experimental batch and loved the results.
Peppermint Chocolate Sauce
1 cup high quality cocoa 1 cup sugar 3/4 cup boiling water 1 tsp vanilla extract 1 tsp peppermint extract
For best results, put cocoa and sugar through sifter together. Whisk in boiling water, then put on stove at medium-high heat just until it starts bubbling, whisking the entire time to dissolve sugar.
Remove from heat and whisk in extracts. Cool to room temperature, then bottle up and keep in refrigerator.
Peppermint Mocha Creamer
1/4 cup (or more to taste) Peppermint Chocolate Sauce 3/4 cup cream or Half n' Half
Whisk a bit of cream into sauce to thin it out, then add the rest. Bottle up and if using raw cream, make sure to use within a week.
I made this, it was great! But a bit too much cocoa for my normal taste. Think I'll try a batch today with little to no cocoa.
Also changed up the flavouring a little bit as I'll do peppermint in my cocoa or hot chocolate but not so much in my coffee. There I'm vanilla or hazelnut. Think I can find any hazelnut flavouring anywhere though?! So French Vanilla it is.

Trim: She probably aborted a while back. That happened to one of my animals. She was bagging up but within a short while of her "due date" she began to deflate. I had no idea what had happened. I was seriously bummed out.
