This is my mother's dough recipe, what I adapted for bread machine, now I make it at least once a week. It's so versatile and so good. I will post picture of a few things I make from it in a comments. If some of you try it, it will make my mom happy, where she is. I remember all the neighbors and friends coming to ask her for a recipe, what she gladly shared.
Load your bread maker in order:
1 cup warm milk
1.5 tbsp oil
2 s/m eggs
1 tbsp mayonnaise
1/4 cup sugar
1/2 tsp salt
3 cups bread machine flour
2 tsp of BM yeast
Select dough setting. Once done flip it on floured surface.It will be sticky, knead it for 30 secs, then cut - depending what you making, cover with a towel and let it rise for about 30 mins.
If you are traditional when it comes to dough:
3 eggs
1/2 cups of sugar
1 1/2 tbsp yeast
2 cups warm milk
1tsp salt
2 tbsp of mayo.
3 tbsp oil
5 cups flour.
Combine yeast and warm milk and let it start working, bubbling. Add eggs, mayo,salt and sugar. whisk together.Mix in flour in small portions. Add oil last. Knead for another 10 min. Cover and let it rise for an hour near warm spot. Once done flip it on floured surface.It will be sticky, knead it for 30 secs, then cut - depending what you making, cover with a towel and let it rise for about 30 mins.
Here are the possibilities.
Stuffed oven baked bread.
I prefer sweet stuffing, but it be equally good with potatoes/onions, potatoes/cheese, eggs/bacon, beef/onions the possibilities are endless. You can roll it inside or make it into danishes with stuff on top.
Whisk an egg to brush on top to get a glaze look.
This is the filling I use.
8 oz cream cheese
8 oz farmers cottage cheese- the one you make from clabber. Both room temp.
1 egg
1/4 cup sugar
1/2 cup of golden raisins. Soaked in boiled water before use.
1 tsp vanilla.
Mix everything together with fork. Don't over do it, if using homemade cream cheese , you know what happens then.
Fold in drained and dry raisins.
For Stuffed bread bake at 350F for 40-45 mins. For danishes/buns 20-30 mins.
But all family, absolutely favorite are what we call "piroshki". Funny, ONE of not many Russian words my kids know and say. I make them with jam or jelly(but again anything can be used), similar shape/concept as Pierogi but a lot bigger. I fry them in a pan with a little oil.
Don't say I haven't warned you, you be stuck making them every weekend.
