I messed up yesterday and did not plan for dinner. It was 4:30. I had to do chores and be out the door by 5:30 and wouldn't be back until after 7:00. I normally try to have something in the crock pot on nights like this. I did an internet search for instant pot, rice, hamburger, and salsa and came up with this recipe. I threw a pound of frozen ground beef into hot water to thaw and went about chores.
Easy Spanish Rice
Ingredients:
• 1 teaspoon olive oil
• 1/4 cup diced onions
• 1/4 cup diced bell pepper
• 3 cups brown rice
• 1 cup salsa
• 2-2/3 cups water
• 1/2 teaspoon salt
Directions:
Measure oil, onion, and pepper into the Instant Pot liner. Choose “sauté” and cook until onions are transparent, stirring often for about five minutes. Add remaining ingredients.
Lock lid in place. Using the “manual” setting, set the Instant Pot to cook for 25 minutes. Let rice rest for ten minutes once cooking time expires, then carefully release pressure. Super. Easy.
This is how I altered it:
Easy Spanish Rice
Ingredients:
1# ground beef
3 cups converted rice
2 cups salsa
3-2/3 cups water
Directions:
Saute' ground beef in Instant Pot. Add remaining ingredients. Stir.
Lock lid in place. Using the “manual” setting, set the Instant Pot to cook for 25 minutes. Set timer for 1 hour 20 minutes. Let it stay on the keep warm setting until we get home.
Super. Easy.
I added the extra water and salsa because rice absorbs so much more water when it sits in it before cooking. I think using converted rice helped keep it from turning to mush. I also would keep the salsa at two cups even if I didn't have the timer set. The bottom did scorch so out of the entire recipe we lost about a cup of food. I think that was due to using the timer. Everyone liked it, to the point of requesting that it happen again, which is unusual. The best part is that they had no idea that dinner happened by the skin of my teeth.
