Hawaiian Grilled Pork Chops

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: Serves 6
Ingredients:
• 6 pork chops, 1 inch thick
• 1 can (20 ounces) pineapple slices
• 1/2 cup soy sauce
• 1/3 cup vegetable oil
• 1/4 cup onion, minced
• 2 cloves garlic, minced
• 1 tablespoon brown sugar
Preparation:
Drain pineapple and pour 1/4 cup of the juice into a bowl. Combine with soy sauce, vegetable oil, onion, garlic, and brown sugar. Place pork chops and pineapple slices in a large resealable bag. Pour marinade mixture over top. Seal bag and refrigerator for 2 hours.
Preheat grill. Remove pork chops from marinade and place on hot grill. Cook for about 15 to 20 minutes or until done. Turn half way through cooking time and baste with remaining marinade. During the last few minutes of cooking, place the pineapple slices on grill and cook until browned on the surface. Top with pineapple slices during the last few minutes of grilling.
We were able to make these recently, and they turned out great ~

We served them with a delicious interpretation of Keith's Hawaiian pasta salad, as prepared by the beautiful Mrs. Tas:

As for the pork chops, talk about good! These were great! The sweet/sour/salty/savory umami-filled combination that can only come from soy sauce, prown sugar and pineapple was absolutely wonderful, accented by the onion and garlic. It just can't get much simpler than this, folks!
With spring (and grilling season) in full-swing, this is one that I can heartily recommend!

Putting pineapple on the grill brings out the sweetness and adds a whole new layer of flavor. Pork chops get loads of flavor and an extra dose of sweetness making for a fantastic meal.
