I've posted on this board a few times as Tim in PA, I just got married and now live in New York so I've changed my screen name. We are still a long way away from having our own cow, I've been thinking about getting one of those dwarf goats or something just to have something to milk. I think our new landlord could handle something like that, but not a cow.
I have a question about making cheese. Is there a website that has cheesemaking recipes? My wife was born in the Azores and loves the cheese they make there. You can get it in Fall River MA were she grew up and where her family lives but not around here. It is also pretty expensive. I don't know the name of the cheese and neither does Noelia or my in laws, its just the cheese they make in the Azores I guess. It is quite variable, sometimes its quite sharp and stinky strong and others are buttery and mild almost like a medium sharp cheddar. My mother-in-law seemed to feel that the differences are based on which island the cheese came from or what time of year it was made, but they never go looking for cheese from one island or another, the Portuguese stores just have two or three cheeses out that they let you taste from and then they cut you off a wedge from the one you like.
So are there websites that might know more than my in laws? Also, does it make sense to try and make cheese with store milk? There is a source of organic raw milk around here but I think it is kind of expensive to be making cheese with. Is there any point in trying to make cheese with store bought pastuerized homogenized milk?
