We are still eating our pig from last fall, Porky. He has been WONDERFUL. The best pork we have ever had. We had him cut into a lot of different parts so that we could experiment and cook different things. I took a roast out of the freezer the other day for the first time. I have never made a bone in pork roast before. I found this recipe on the internet and the flavor of the meat with real fat on it and the herbs was incredible. Every bite I took I said "isn't this wonderful?". I felt like I had never tasted pork before.
The only change I made was that I did not use the olive oil. I just rubbed the herb mix into the pork on all sides. I also did it an hour or so before I baked it so that some of the flavor could get into the meat. I did not trim off the layer of fat on the roast either and I think this kept the roast very moist and tender.
Herb Rubbed Sirloin Tip Roast
INGREDIENTS
1 1/4 tablespoons paprika
1 tablespoon kosher salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon ground cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 tablespoons olive oil
1 (3 pound) sirloin tip roast
DIRECTIONS
In a small bowl, mix the paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. Stir in the olive oil, and allow the mixture to sit about 15 minutes.
Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
Place the roast on the prepared baking sheet, and cover on all sides with the spice mixture.
Roast 1 hour in the preheated oven, or to a minimum internal temperature of 145 degrees F (63 degrees C). Let sit 15 minutes before slicing.
