What would y'all do with beef kidneys? I have never had them before, but I seem to have a pair lurking around here and would like some ideas - favorite recipes tried and true! Thanks
Ok, I'll start, with JouLinated Steak & Kidney... pie? not really, but for lack of a better term, here was the process (was a little choppy, considering my time was short)
Soak 1 beef kidney in salt water for 1-2 hours. Remove and put in cold acidulated water (water with a little lemon juice (or lime, or vinegar) added). Gently bring to a boil and simmer for 30 minutes while you:
Preheat oven to 400 F while you cut your beef (steak or whathaveyou) into large bite size bits. Chop 3 or 4 small fresh tomatoes, or canned if that is what you have
into casserole dish over beef. Add about 1TBS Tamari (soy sauce), a teaspoon of peppercorns and cover with lid or foil. Put dish in the oven and immediately reduce heat to 325. Bake for ~45 minutes.
Meanwhile:
Remove kidney from heat & rinse in cold water. slice, trim fat & veins & junk from the center and chop up into little bits.
Prepare biscuit topping:
2 cups sifted WW Flour
3 tsp baking powder
1 tsp sea salt
sift together into a bowl and set aside for now.
chop up one small onion and simmer in a wee bit of fresh milk until tender & transparent. remove onions from saucepan leaving milk (less than 1 tsp).
Remove casserole from oven, pour drippings into saucepan (with milk), add kidney to casserole, sprinkle with Worchestershire sauce & 2 cloves of fresh garlic, sliced, toss it all up, cover and return to oven for 45 minutes or until meat is tender like butter.
Thicken drippings with 2-3 (or 4) TBS WW flour. It can be quite thick, as there will be more drippings soon. Add 2-4 TBS raw soured cream.
Remove meat from oven, combine with gravy. Turn oven up to 475
(back to the biscuits)
Pour 3/4 cup fresh milk & 1/4 cup ex virg olive oil over flour mixture all at once and combine with a fork in as few strokes as possible, while adding onions. When the dough comes easily away from the sides of the bowl and will roll into a ball it is ready. Form 1 1/2-2 inch balls and place fairly close on the top of the meat mixture until it is covered. There will be little spaces, you can fill them in as best you can, and flatten the balls a bit if you feel, but it is not too important. return to oven, uncovered, for 10-15 minutes, until the biscuits are browned. The bigger the balls, the longer this will take.
Serve!
