Finally get to make stuff with our milk :D

Heya
So Tallulah, my cow, tends to fluctuate in production depending on the weather and how much feed is available. Over winter it got really dry, and for some time I'd been getting 1 litre (that's 1 quart) from Tallulah each day. As it happens, we use almost exactly 1 litre a day just on cereal, coffee, and those kind of basics which use the plain milk. So there was never enough to actually make/cook anything with it.
She'd been getting rhodes hay overnight, and late last month the round bale ran out. I had the hardest time tracking down more - the usual guy was out for several weeks. Finally he got lucerne (alfalfa) squares in. They were just $12 ea, way cheaper than anyone else around. She's never had lucerne before; it's always been rhodes. So I started giving it to her and her production went up On top of the weeds and veggies I had been giving her, she's now doing 1.5-2 litres a day.
It's not a lot more, but we've been so used to getting just 1 litre that the extra started building up because we didn't make anything with it. Soon enough I found out there was over 6 litres in the fridge and the oldest was around a week old and starting to go off Soo I figured we better start making stuff!
My sister is the official cook of the house, so she's actually the one who makes the goodies. So far she's done:
Delicious iced coffees
Berry milkshakes
Vanilla icecream - the first homemade icecream we've ever made! We tried using a cheap icecream maker we got some time ago, but the thing is a piece of crap and just made cold custard. We froze the custard and it did turn out as okay icecream, but not as smooth and creamy as it should be.
Ricotta - I'm really proud of this It's just like proper ricotta. My sister put it on a homemade spinach and ricotta pizza and it was delicious!
The whey still seemed a bit milky (that's the whey in the bottle) so perhaps the milk didn't quite curdle enough or something? My sister tried using the whey to make naan bread but the recipe was awful and the bread inedible, an unfortunate waste of half the whey
Next up she is making yoghurt! I can't wait to try that out
