ill start with a photo of the pig and the pen setup.. and what used to be his home..(this was the messiest nastiest pig ihave raised yet.. he messed in his pig hut .. sigh..)
the mini pen to the side was a way for me to get him where i wanted.. its hard to explain the setup but as you can see.. i have it attached to thepen.. i had it so that i could open it and he could go in himself then i closed it.. and wired it shut.. i had to put a t post on the other side to keep him from rooting the pen to the one side... and getting off the metal sheeting.. its wider at the front where i would of course want him.. and so it would also make him feel more comfortable facing that direction.. it was also big enouhg for him to lay down.. i washed him off.. and he was totally crusted.. then let him dry and put in some hay for bedding.. and left him till morning.. morning comes.. i get prepared.. get the chain and tractor near by..unhook the front so that as soon as he was down i could rush in and stick him.. then i took one shot.. and he dropped..
i then stuck him.. and got the tractor closer.. attached the chain to his one leg and hoisted up to complete the bleeding..rinced him off compleetly then took him to the other side to unzip him..
here we are at the other side of the pond.. where i unzip the pigs..
this is how i start.. i start by cutting from the bottom up.. if you open the chest cavity first and break open the bone.. its much easier as you dont have the guts hanging in your way and they drop right out..
here i am halfway through.. i have his wanker slung over his ham.. and i was in the process of cutting out the bung.. and of course the nosey cow just haad to see what i was doing
here you can see the bung wanker and bladder are hanging out and all i have to do is gently nick the attaching tendons and flesh to allow it all to drop..
here you can see the innards.. "lights also called lungs"
and other stuff hanging free.. ready to be fully pulled out..
here you can see everything in a pile.. i didnt want the heart/kidneys etc. so left them but i did inspect and it was healthy all through.. also.. not feeding for a day makes a big difference in howeasy it is to gut. also when cutting from bottom up if you are carefull.. and just nick near top to let in air in the cavity it allows everything to settle down. making it much much easier to slit without cutting the gut.. you still have to be carefull tho..
