Well our steer tastes .... Amazing??

I am absolutely flabbergasted. I was expecting our jersey steer to really not taste great, probably gamey and very tough. But figured it'd be better than nothing. Our pasture was grazed down pretty good, and we butchered in beginning of December I think. We should have put hay out October first, but my husband still had not despite constant reminding. I was ready to call someone to haul them away if they had no food and snow covered the pasture or looked too skinny. Miraculously, the weather has been amazing, so though yippee lost a little weight Emmy lou looked fine. It t was so frustrating to not be able to do anything, knowing we were going to be butchering an animal that was losing weight. We also never grained him, which I had wanted to at least a little bit per day. He was a lean steer, I mean not as lean as a dairy cow you couldn't see short ribs and his hooks and pins were covered but he absolutely looked too thin to want to eat.
First off I was surprised with how much suet fat he had, must've been 60 lbs. The ground beef has been a little lean, but to be fair I did forget to ask the butcher to add any fat too the burger because we like fatty burger so maybe that's why. So I really was expecting the steaks to be tough as boots. I brought up some tbone steaks I was going to slice thinly for stir fry, again I thought the steaks would be too tough to eat like a steak!
But Those steaks were gorgeous! Marbled and the deepest red! I sliced one steak for stir fry then seared the other steak in tallow and it was delicious. No gamey taste at all, and wasn't too tough at all.
How did this happen?? He had all the strikes against him. He was 3 1/2 years old and lean. Why does he taste better than the 23 month steer we did, who we had grained. He was also skinny as well despite being fed well. I was told it was just what dairy animals look like before they hit 2, just all bone. But his meat was not so beautifully red, it was a paler slightly more opaque pinkish red. I am assuming it was because yippee was on pasture and there was more oxygenation from the movement. The younger steer was done in March. Also maybe more marbling because yippee was older.
Just curious now to hear about factors that effects color and everything and if you have ever gotten a beef that tasted stringy and bad. What does an old dairy cow taste like? I am so happy we have a freezer full of delicious edible beef and not tough stringy gamey beef.
