Freezer meal burritos

I wanted to share a go to freezer meal I've been making fo a few months and just love it. I keep my freezer stocked now. Especially since I'm just not way into cooking at he moment. These are like qdoba/Chipotle style burritos. The key IMO to a delicious burrito is the sauce which keeps it from drying out or being bland. I'll try to put it Ina recipe format haha! Just use your instincts for amounts... Try to make lots at a time. I use at least two packages of Tortillas.
Large Burrito style Tortillas the bigger the better
Salsa
Canned black beans
Shredded cheese o your choice
Cooked chicken breast or steak(I marinate mine in oil lime juice and Mexican kind of spices)
Cooked Rice(I do Cilantro lime rice, extra extra Cilantro and lime lol and butter)
Avocado
More Cilantro
And I make this sauce which is VERY IMPORTANT for the recipe
Equal parts mayo and sour cream, then however much hot sauce. I use tapatio. I've also used the sauce in a can of chili's in Adobe sauce which was delicious. Make like two cups of this stuff you'll need it.
Ok just assemble your burritos using however much of each ingredient you want. I discovered that avocado actually freezes extraordinarily well, which I had read it didn't so that was a pleasant surprise. If you really want you could just throw all of the ingredients in a bowl, smoosh together then fill the Tortillas, which I've done Before. But I prefer layering. One tip is to make sure the sauce or cheese goes directly next to the rice so it doesn't dry out.
You can fit more filling if you steam the Tortillas but that's your choice. Wrap them in foil and freeze. When I want to eat them I either bake or defrost in the microwave. The best way to eat them is getting the tortilla all crisp, I smear with butter and put it in the air fryer or brown in my cast iron.
As usual I probably over explained and overcomplicated. But it is one of the best freezer meals, and actually pretty easy to make.
