APPLE SAUCE CAKE-IN-A-JAR
Ingredients:
24 oz of apple sauce, or 3 cups of peeled, chopped apples.
3 eggs
1 cup sugar (original recipe did not call for sugar)
3 cups flour, all purpose or whole wheat pastry flour
1 cup melted butter (originally called for corn oil but I avoid veg oils)
1 ½ cups chopped walnuts or hazelnuts, pecans, etc
2 teaspoons vanilla
1 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon ginger
½ teaspoon cloves
½ teaspoon salt
1 cup raisins, currants, or chopped dates
Pre-heat oven to 325 degrees F.
Grease and flour 6 or 8 wide mouth PINT jars. Fill the jars about HALF full with cake batter. Bake at 325 for about 30 minutes, or until a tooth pick comes out dry. Remove the jars from the oven ONE at a time, wipe the rim, then cap with simmered canning lid and secure the ring. Cool the jars on a towel until they "ping" and seal. Store on a dark, cool shelf.

It took about 50 minutes to bake in a bundt pan.
I use these "cakes in a jar" in my Christmas gift baskets. Several cakes will work. Especially the moist ones. Pumpkin cake, blue berry muffins, chocolate/cherry cake, brownie recipe. They keep for months and pop right out to slice in nice, round pieces for surprise company.

Sally made this cake with great success in a bundt pan using chopped apples. The principle change she made from the original recipe (besides not putting it into jars) was to use melted butter rather than oil, adding sugar and baking powder.
It clearly is a forgiving recipe.
