This is our first time getting one of our calves butchered, and first time with a dairy breed. We have some questions about how to get him processed. He is a 6 month old very beefy jersey. He has been on his mom the whole time so quite chunky.
Should he just be turned entirely into hamburger, or what cuts do you suggest? How will the taste differ from an older animal?

The taste of young beef is very mild. I like the taste of an older animal, personally, as I think it has a lot more flavor, but sometimes you just gotta do it while they're young. No need to turn it all into burger, unless you really like burger! Just make the cuts you like but expect that there won't be much meat on the ribs.

We had young beef butchered and it was succulent! Buttery and tender but not real "meaty" flavored. The t bones were PERFECT size for normal portions and the round steak makes the best chicken fried steak!! We had them butchered like a regular animal. Smaller cuts, VERY tender and melty. Do NOT overcook it. It is best just barely cooked. The meat is light pink and very fine grained. Wonderful meat.
I would say it is tasty, but not a mature beef taste. I think the cuts are good but I didn't love the burger. ~Joyce
Not thrilled to hear that..... That is one of the main reasons we are butchering him instead of trying to sell him because we just put a 1/4 of a highland in the freezer and didn't get much burger. We have never butchered a young one (or dairy breed, only beefers) and just don't know what to expect. Now I second guessing what we should do with him.
I would sell him and use put the money toward an older steer or half a beef from someone. It's such a waste to burger milk-fed calf.

Trim: She probably aborted a while back. That happened to one of my animals. She was bagging up but within a short while of her "due date" she began to deflate. I had no idea what had happened. I was seriously bummed out.
