This is the first beef we have ever done ourselves. In the past we have had the mobile butcher come to our farm and do the killing and then he transports our meat to the butcher to be cooled, aged and then cut and wrapped to our specs. We have had 4 different mobile butchers come to do the killing in the past 12-14 years. They have all killed, skinned then gutted so we just assumed that was the way it was done. Then I met people here on KFC who have been butchering their own for years and they shared all their knowledge and experience with us and so we went with the way everyone we had contact with did it. The meat is very clean and so far we are really happy with the way things are going!
We used the tractor (just a Ford lol) to hoist it up and yes it was so nice to just hose it off when done. (the meat not the tractor lol)
Rose - Joe is really liking the idea of having that winch available in the butcher shop. When you get a chance he would like to have the dimensions of your shop and cooler. I know you said you are going to enlarge your cooler someday, he won't be doing as much butchering as you do but he still doesn't want to make it too small. He would really like to be able to hang 2 beef with no problem. Please don't feel rushed about getting us the info. we are snowed in till March so until then he will just be dreaming and drawing plans!!!
We have 2 feet of snow here right now and it is so beautiful!!! Just thought I'd share that now while I am enjoying it!!!! In a few days it will be all dirty and ugly and I don't enjoy dirty ugly snow!!!
