I bought a huge box of butternut squash from the Mennonites the other day for $8. I just made the best soup with it!
Butternut Bisque ;D
Peel and cube one large butternut squash. In large pot, saute one onion in a couple pats of butter until soft. Add cubed squash and saute until it just begins to soften. Add a can of chicken (or vegetable) broth, salt & pinch of pepper. Simmer, covered, until squash is very tender, about 20 min. With hand blender, blend squash and onion to a puree. Add 2-3 cups of whole milk, one bay leaf, about 1/2 cup of cheese (don't cringe, but I used Velveeta) and heat until the cheese is melted. Remove bay leaf as soon as it's heated through.
Serve with a hunk of hot, buttery wheat bread. It is a very thick, rich and filling soup. Delicious!
Does anyone have any other recipes for butternut? After experimenting with a few dishes, I still have about 20 left!
Peel and cube the squash. Melt some butter (enough to coat the squash pieces) Add fresh chopped garlic and rosemary, salt & pepper Add some sliced red peppers if you have them.
Toss it all together. Bake in a shallow roasting pan at 350 for 30 minutes until slightly golden/edges of squash are browning.
A perennial favorite!!

alpacalexi: My mini jersey cow is pregnant, however the last couple days her udder has deflated. My vet saw her on the 23 and said delivery in a couple weeks Is there a reason for her deflating?

Trim: She probably aborted a while back. That happened to one of my animals. She was bagging up but within a short while of her "due date" she began to deflate. I had no idea what had happened. I was seriously bummed out.
