Hi All
I have 4 teenage boys whose metabolisms are running full tilt. I make sure there is a plentiful, healthy meal on the table for dinner, and options for breakfast (often deemed not very exciting but eggs, toast, peanutbutter, smoothie, you make your own). Sometimes there are enough leftovers for the 3 working guys (DH, sons 1 and 2) but often lunch is a little slim for those guys. The rest of us at home (2 teens, twin 9 y/o's, and me) usually cook up something. I am looking for snack/portable lunch ideas that are healthy (which to us means high protein, plenty of fat, veggies, lower carb/sugar). I am not looking to buy granola bars from Aldi, you know what I mean? Really they would like to turn 3 cows into jerky and that would be perfect, but we just aren't there yet. Cow will freshen in April, so milk will add to easy options.
We eat a ton of carrots, fruit flies out of here and does not hold them long.
Nuts- we eat more than we should since they are expensive and give some among us tummy trouble
Eggs-hens are a little slower in production, so fewer than in spring, but I try to make all recipes egg heavy for nutrition
Beans-sad to say most here cannot digest them without extreme discomfort to themselves and others around them
I love the idea of make ahead/frozen breakfast sammiches/pockets for those guys heading out the door, but we do not own a microwave. Heating ideas? Some of the guys have access to a microwave on the job, so maybe for lunch?
What are you all feeding your guys on the go, not to mention that it would be nice to head out the door myself without first slaughtering the chicken to make a snack (not really, but you know how a from scratch life feels).
Also, how do you keep those "easy" things on hand short of hiding them in the cellar or putting them under lock and key? It just flies out of here, and I'm sextupling all recipes! I must not have adjusted to the volume I need to produce. What's in your pantry that's easy and yummy?
