I made this last night for dinner and it's a tasty way to fix butternut squash.
Butternut Squash Casserole
2 small- med. butternut squash, peeled and sliced
1/2 cup minced onion
1/4 cup butter, melted
1 cup cracker crumbs
1/2 cup shredded cheddar cheese (oh who am I kidding...put as much as you like!)
Salt & Pepper to taste
1/2 cup cream (see note on cheese...I mean really, we own cows....put a quart in there if you like!)
Grease 9x13 pan. Put one layer of butternut squash in bottom of pan. Mix together all other ingredients except the cream and layer half of it on top of butternut squash; do another layer of squash, layer of cracker crumbs, layer of squash. Pour cream on top of it all. Cover and bake for 30 min at 350 degrees. Uncover and bake 15 more min. Serves 8-10
Another favorite:
Chicken Divan
3 1/2 cups cooked chicken
1 bunch broccoli, steamed about 5 min.
2 cans cream of chicken soup
3/4 cup mayo
1/4 t. curry powder
1 t. lemon juice
Herb stuffing or bread crumbs
Parmesan cheese
Hot cooked rice
Heat soup (or not, I don't usually), stir in mayo, lemon juice, and curry powder. Place broccoli in greased baking dish (9x13"). Add chicken; top with soup/mayo. Sprinkle with bread crumbs and sprinkle with parmesan cheese. Bake at 350 deg. for 30 min or until bubbly. Serve on top of cooked rice.

Chicken Taco Casserole
3 1/2 cups cooked chicken
1 can cream of mushroom or cream of chicken soup
1 cup salsa
1/4 cup onion, chopped
1 t. chili powder
1 cup shredded cheddar cheddar cheese
5-6 taco shells, toasted and broken up (350 for 5 min)
Hot cooked rice
Combine ingredients except cheese and taco shells. Heat through. Top with taco shells and cheese. Pour in a greased 9x13" dish. Serve on top of hot cooked rice. Serves 4-6
(I am now tired of fighting with my 10 mo. old for hitting the screen of my laptop. More later.)
