You have to have a taller canner to do two layers, like the 22 quart. The smaller ones won't do two layers. A friend of ours has one of the 41.5 qt canners...it holds 32 pint jars! It was a monster to lug around though.
I have a motley crew of jars also so I understand.
Glad you are having success w/your sauce. I am freezing tomato juice to make pizza sauce this fall.
