So we're over run with eggs right now. I finally have the girls laying through the winter and can't keep up! So, eggs have been the staple of every meal for the past few months and I'm getting sick of them. I needed a way to preserve some, and of course stumbled onto pickling them. I didn't like pickled eggs as a child but thanks to Pinterest I found some ideas to make some pickled egg recipes that I love!
So they aren't gonna be technical recipes. I basically dump the ingredients together, boil it and pour it over the eggs in clean jars. I make sure there is at least a cup Or so of vinegar. Make sure the solution covers the eggs and let them sit at least a week to get flavourful. They last weeks and weeks. We eat them pretty quickly so maybe they'll last longer!
#1: orange ginger honey
I put orange juice, orange slices, fresh ginger root and honey in the water vinegar mix. They're very tasty.
#2: spicy garlic
Cayenne pepper, lots of fresh garlic slices and Chili pepper flakes in the water vinegar mix.
#3: dill pickle
This was the easiest. After the pickle jar was empty I boiled the juice, added a little extra dill and garlic and put the eggs back in.
#4: spicy something or another
This one had onions, jalapeño peices, cloves, cinnamon, black pepper, and a bit of cumin. I keep thinking tereneas was something else too bit it's not coming to mind. Sorry. They are actuly my favorite ones and I can't remember what the heck I all out in there. Dang improv cooking!
#5: smokey BBQ
I haven't true these yet but it's onion, garlic, liquid smoke and a bit of BBQ sauce. Oh and black pepper. They sound good, hopefully they will be.
I also have been just reusing the juice in the next batches. I re boil it, add a little extra vinegar to be sure and sometimes a bit more spices but usually not. I saw people doing mustard ones and using beet juice as well bit j haven't tried them either so, If you do and like them let me know.
