Tonight we put 1 gallon of cream into our electric churn. It had sat out for about 48 hours because I forgot to make it yesterday. I usually set it out at night and make it in the morning. Well, I got 5.5 lbs of butter from it. Is it because it sat out longer? It was starting to bubble by the time I churned it.
There was virtually no whey left in the jar, it was almost solid butter.
