It is so hard to find good Gluten Free recipes for ordinary food.
A friend of mine brought me a few muffins and a recipe last week. The muffins were great; so, naturally I had to mess with the recipe a bit.
Cream together:
2 Eggs
1/2 Cup Vegetable Oil
1 Cup sugar
2 teaspoons GF vanilla (I don't worry about the GF part- regular vanilla has never bothered me)
1/4 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp salt
1/4 tsp Ground Cloves
1 1/2 Cup GF Flour Mix*
1 tsp tsp Xanthan Gum
1 Cup Chopped Walnuts, or pecans
Mix together. Add wet ingredients- mix well. Then add
1 1/2 Cups Shredded Zucchini
Preheat oven to 350. Pour into greased 9x5 loaf pan, or scoop into muffin tins with cupcake wrappers. (about 3/4 full)
Bake loaf for 60-70 minutes, or muffins for about 30 minutes- until a tooth pick inserted in the center comes out clean.
*You can use Bob's Red Mill GF Flour
OR
1 Cup White Rice Flour
1/2 Cup Tapioca Flour
1/2 Cup Corn Starch
Sift together well to be sure they are well mixed.
** I used the mix above for these muffins- the texture (and flavor) is outstanding! (considering they are GF)- and no weird bean flavor like the Bob's can have. I doubled the mix recipe and it made 3 batches of muffins.
***I never bake with nuts. Yuck
**** I added 1 Tbs Chia Seeds, and 1 Cup Raisins to one batch- YOU MUST DO THIS!!!! AMAZING!
*****I omitted the spices, added 1TBS Milk to the wet ingredients, omitted the Zucchini, and added 1 1/2 Cups shredded coconut. It's pretty awesome too! (though a bit gummy in the spots where the cocnut clumped- still working on that)
